Chocolate Chunk Macadamia Banana Bread

CHOCOLATE CHUNK MACADAMIA BANANA BREAD - INGREDIENTS2 large, ripe bananas (if your bananas are small, add a third)1/2 cup almond butter2 eggs1/2 cup coconut flour3/4 tsp baking soda3/4 tsp baking powder1/4 tsp salt1 tsp cinnamon1 cup macadamia nuts, roughly chopped1 chocolate bar (I used Hu Kitchen as it's my ABSOLUTE FAVORITE!)

I know exactly what you are thinking…ANOTHER banana bread recipe. But no, this is not just another banana bread recipe. It’s the one that you are going to make over and over again. It’s simple to make, nice and moist, naturally sweetened only with the banana, and can we talk about the chocolate and macadamia combination? Need I say more?!

Banana bread is probably one of my most favorite things to make, but until now, I hadn’t perfected “THE ONE” for you. That’s why my blog is filled with tons and tons of cookies and muffins, and just one banana bread recipe. Well, my friends, that is about to change right now.

In this recipe, I decided to go with coconut flour instead of almond flour, for no other reason other than I feel that it makes a much lighter, less dense, banana bread. For all my Vegan friends, you can totally veganize it by subbing out the two eggs for flax eggs. Here is the tutorial from Minimalist Baker, it’s super easy!

Let’s do this, shall we?

Ingredients

  • 2 large, ripe bananas (if your bananas are small, add a third)
  • ½ cup almond butter
  • 2 eggs
  • ½ cup coconut flour
  • ¾ tsp baking soda
  • ¾ tsp baking powder
  • ¼ tsp salt
  • 1 tsp cinnamon
  • 1 cup macadamia nuts, roughly chopped
  • 1 chocolate bar (I used Hu Kitchen as it's my ABSOLUTE FAVORITE!)

Instructions

  • Preheat oven to 350.
  • Line 9x5 loaf pan with parchment paper. To make the parchment paper stick, I always recommend greasing the inside of the pan with coconut oil or avocado oil, and trimming the paper to fit.
  • In a mixing bowl, add the bananas, almond butter, and eggs. If you have a hand blender, use that, otherwise you can just use your blender and pulse until combined.
  • Next, add the coconut flour, baking soda, baking powder, salt, and cinnamon, and mix together well.
  • Fold in half of the macadamia nuts and half of the chocolate.
  • Pour mixture into the loaf pan and pour remaining macadamia nuts and chocolate on top.
  • Bake for 30-35 minutes.
  • Remove from the oven and let cool before slicing. ENJOY!!!

  2. I want to make this for my tweens’ school lunches, which has a no-nut policy. Can I use Sun Butter instead? Any suggestions to replace the macadamia nuts?

    • Hi Genevieve! Yes! You can use Sun Butter! And how about using some dried fruit in place of the macadamias?
