PALEO CHOCOLATE ORANGE MUFFINS

Ingredients

  • 1 3/4 cups almond flour
  • 1/4 cup cacao powder or unsweetened cocoa powder
  • 1/4 cup Purecane or maple syrup or honey
  • 1/4 cup orange juice
  • 3 eggs room temp
  • 1 teaspoon baking soda
  • Zest from one orange
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips plus extra to sprinkle on top of the muffins!
  • 4 tablespoons coconut oil melted and cooled

Instructions

  • Preheat oven to 350.
  • Line a muffin tin with liners or grease well.
  • In a medium bowl, whisk together the maple syrup, orange juice, eggs, orange zest, vanilla extract, and melted coconut oil.
  • Next, add the almond flour, cacao/cocoa, and baking soda. Stir until just combined, but don’t over mix.
  • Fold in the chocolate chips.
  • Pour batter into the muffin tin.
  • Sprinkle a few extra chocolate chips on top!
  • Bake for 16-18 minutes, until batter comes out clean with a toothpick.
  • Let cool completely.
  • Garnish with extra orange zest if desired.
  • Enjoy!
