Preheat oven to 450.
Line a baking sheet with parchment paper and set aside.
Wash your cauliflower and break it into small florets.
Next, grab a bowl, and whisk together the flour, garlic powder, black pepper, paprika, and salt.
Add the non-dairy milk and give it a good whisk until there are no clumps (or almost no clumps, totally fine if there are a few!).
Dip each piece of cauliflower into the mixture, and then line them up on the baking sheet, making sure they don’t touch — give these babies space!
Bake for 20 minutes.
Remove from the oven.
Pour your buffalo sauce into a bowl, then dip each cauliflower floret into the buffalo sauce, and place them back onto the baking sheet, giving them space again.
Bake for another 20 minutes.
Remove from the oven!
Garnish with fresh chives or green onions and serve with ranch dressing.
