PINEAPPLE OATMEAL BAKE

Ingredients

  • 1 cup gluten free rolled oats
  • 2 tablespoons ground flaxseed meal
  • 1/4 cup unsweetened shredded coconut
  • 1 banana mashed
  • 1 cup almond milk
  • 1/2 cup crushed pineapple from the can
  • 1/2 cup Bare Snacks Simply Pineapple optional
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon

Optional glaze:

  • 2 tablespoons powdered sugar
  • 1/2 teaspoon water

Instructions

  • Preheat oven to 350.
  • Grease a 4x6 baking dish (or four small ramekins) with oil of choice.
  • In a medium bowl, mash the banana.
  • Add the rest of the ingredients to the bowl and mix well.
  • Transfer to the baking dish.
  • Add some extra pineapples to the top, and bake for about 20 minutes.
  • If you are topping your oatmeal make with the glaze, whisk together the glaze ingredients, and then drizzle it on top.
  • Enjoy!
