Slice each chicken breast in half, lengthwise, then cut them into strips.
In a small bowl, whisk together the eggs, mashed garlic, italian seasoning, and salt.
In a second small bowl, whisk together the parmesan cheese, bread crumbs, and flour.
Drip each piece of chicken first into the egg mixture, then transfer to the parmesan mixture, making sure that each piece is coated very well.
Heat a large skillet over medium heat.
Add about 2 tablespoons of the oil and 1 tablespoon of the butter/ghee to the pan.
Add chicken and cook for about 4 minutes on each side.
Remove cooked chicken from the pan, add remaining oil and butter, and finish cooking all of the chicken.
Plate and serve - garnish with chopped parsley and serve with lemon wedges.
