2-Minute Salted Caramel Cashew Milk

It's time to ditch your overpriced coffee creamer for a delicious, easy nut milk that's made in just minutes. My 2-Minute Salted Caramel Cashew Milk comes together with just 5 simple ingredients and truly tastes like salted caramel in a glass. It's made from medjool dates, sea salt, and a little vanilla- and, of course, cashews- and doesn't require any pre-soaking. Meaning, this is truly a 2 minute recipe!

Equipment

  • 1 Blender You already know that my Vitamix is my ride-or-die blender. It is my favorite kitchen gadget, and I use it every single day!
  • 2 Milk Bottles

Ingredients

  • 1.5 Cups Raw Cashews
  • 5 Medjool Dates pitted
  • 6 Cups Cold Water
  • 1 Tablespoon Vanilla Extract
  • ½ Teaspoon Sea Salt

Instructions

  • To make this cashew milk, add all of the ingredients to a high-speed blender and blend for 2 minutes, until the liquid is completely smooth and no chunks of cashews and dates remain.
  • Once it's done, transfer it to large jars and store it in the fridge until you're ready to enjoy it. It should stay good in the fridge for up to one week!
