If you prefer to cook the steak on a stovetop, simply place a grill pan, on the stove, over high heat and add in 1-2 tablespoons of oil.
Then, add the steak to the pan and allow it to cook for 4 minutes on each side, for a medium-rare cook.
Regardless of preparation method, once the steak is done, remove it from the heat and allow it to rest for 5-10 minutes before slicing.
Next, prepare the corn salad by cooking the corn. You can use fresh ears of corn and cook them on the grill or stovetop, alongside the steak- this will usually take approximately 10 minutes. However, if using frozen corn, simply prepare it according to the package instructions.
Then, assemble the corn salad by adding the cooked corn to a large bowl alongside the red onion, cilantro, lime zest, and lime juice, garlic, chili powder, sea salt, and yogurt. Mix the ingredients together well, and taste and adjust the seasonings as needed.
Finally, assemble the tacos. Warm the tortillas on a stovetop or in the microwave and top each one with the steak, corn salad, cotija cheese, and marinated onions.
