My Easy Steak Tacos with Corn Salsa are truly the perfect summertime taco recipe. They come together with a juicy skirt steak and a creamy, protein-packed corn salsa that is light, refreshing, and perfect for those warm summer days. Enjoy these tacos poolside (and with a beer in-hand) for the ultimate warm weather treat!

🌮 Why You’ll Love These Easy Steak Tacos

The one dish that is on rotation at my household all summer long, is tacos. There’s something about a crispy tortilla, loaded with perfectly-grilled meat and a creamy, refreshing salsa that just screams summertime to me. So, when I was dreaming up my perfect summertime taco, the first thing that came to mind were juicy grilled steak tacos.

These tacos are incredibly simple to put together. Made from a simple skirt steak that is seasoned and grilled to perfection, it practically melts in your mouth. And, when paired alongside the creamy corn salsa (that is packed with protein thanks to the greek yogurt)… it is truly a match made in heaven. Get ready, because this is about to become your new favorite taco recipe!

What You Need to Make These Perfect Steak Tacos

  • Steak Rub: The rub for this steak comes together with a blend of kosher salt, garlic powder, onion powder, ground black pepper, coriander, cinnamon, chili powder, and ground or instant coffee. Don’t knock it until you try it – this rub is absolutely delicious and will yield the perfect steak, every time!
  • 🥩 Skirt Steak: My favorite cut of steak to use for these tacos is skirt steak. It’s juicy and loaded with flavor, making it perfect in this recipe.
  • 🌽 Corn: It wouldn’t be a corn salad without the corn. You can use either fresh ears of corn or frozen corn. Both work just as well!
  • 🧅 Red Onion: Fresh, chopped red onions add brightness and flavor to this salad. Don’t skip this!
  • Cilantro: Of course, no taco recipe would be complete without the cilantro! I love using fresh cilantro both in the corn salad and as a finishing garnish at the end.
  • Lime: The juice of one lime helps to cut through the thick greek yogurt and adds a tangy flavor to this salad.
  • 🧄 Garlic: Fresh garlic cloves are essential for adding a delicious flavor to this salad. I always recommend using them whenever possible!
  • 🌶️ Chili Powder: Chili powder adds a little bit of heat to the corn salad, without making it too spicy. If you prefer a spicier flavor, you can always add more in.
  • Kosher Salt: A pinch of salt adds the right amount of flavor to this corn salad.
  • Greek Yogurt: Greek yogurt not only adds creaminess to the corn salad, but also packs in the protein, helping you stay fuller, longer! If you want to keep this recipe dairy-free, simply swap out the greek yogurt for a dairy-free alternative.
  • 🌮 Street Corn Tortillas: Street-sized corn tortillas are perfect for these tacos.
  • Cotija Cheese: This is optional, but I love finishing off these tacos with a sprinkle of cotija cheese.
  • Marinated Onions: And last, but certainly not least, I love topping off these tacos with my Quick Marinated Onions. These onions are bright, flavorful, and perfect for this recipe!

Prepare the corn salad by cooking the corn. Then, assemble the corn salad by adding the cooked corn to a large bowl alongside the red onion, cilantro, lime zest, and lime juice, garlic, chili powder, sea salt, and yogurt. Mix the ingredients together well, and taste and adjust the seasonings as needed.

How to Make These Easy Grilled Tacos

To make these tacos, start by preparing the seasoning. Add the kosher salt, garlic powder, onion powder, ground black pepper, coriander, cinnamon, chili powder, and ground coffee to a small bowl and mix to fully combined. Next, prepare the steak by rubbing it generously with the seasoning blend.

Then, heat your grill to 450 and grill the steak for 4 minutes on each side. This is for a medium-rare cook. If you prefer your steak well-done, you can cook it for longer. If you prefer to cook the steak on a stovetop, simply place a grill pan, on the stove, over high heat and add in 1-2 tablespoons of oil. Then, add the steak to the pan and allow it to cook for 4 minutes on each side, for a medium-rare cook.

Regardless of preparation method, once the steak is done, remove it from the heat and allow it to rest for 5-10 minutes before slicing. Next, prepare the corn salad by cooking the corn. You can use fresh ears of corn and cook them on the grill or stovetop, alongside the steak- this will usually take approximately 10 minutes. However, if using frozen corn, simply prepare it according to the package instructions.

Then, assemble the corn salad by adding the cooked corn to a large bowl alongside the red onion, cilantro, lime zest, and lime juice, garlic, chili powder, sea salt, and yogurt. Mix the ingredients together well, and taste and adjust the seasonings as needed.

Finally, assemble the tacos. Warm the tortillas on a stovetop or in the microwave and top each one with the steak, corn salad, cotija cheese, and marinated onions. Once they’re done, serve and enjoy!

Ingredients

For the Steak:

  • 2 Teaspoons Kosher Salt
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Onion Powder
  • 1 Teaspoon Ground Black Pepper
  • ½ Teaspoon Coriander
  • ½ Teaspoon Cinnamon
  • ½ Teaspoon Chili Powder
  • ½ Teaspoon Ground Coffee or Instant Coffee optional but highly recommended
  • 16 Ounces Skirt Steak

For the Corn Salad:

  • 2 Cups Cooked Corn Kernals this is approximately 3 ears of corn
  • ¼ Cup Red Onion finely diced
  • ¼ Cup Cilantro chopped
  • 1 Lime zested and juiced
  • 2 Cloves Garlic mashed
  • ¼ Teaspoon Chili Powder
  • ½ Teaspoon Kosher Salt
  • 1 ½ Cups Greek Yogurt

For Assembling + Garnishing:

  • 12 Street Corn Tortillas
  • ½ – ¾ Cup Cotija Cheese crumbled
  • 1 Spoonful Marinated Onions here is my recipe!

Instructions

  • To make these tacos, start by preparing the seasoning. Add the kosher salt, garlic powder, onion powder, ground black pepper, coriander, cinnamon, chili powder, and ground coffee to a small bowl and mix to fully combined.

  • Then, heat your grill to 450 and grill the steak for 4 minutes on each side. This is for a medium-rare cook. If you prefer your steak well-done, you can cook it for longer.
