Hi, I’m Nicole, and welcome to KALEJUNKIE®, a place where you will ironically (or not so ironically) find very little kale, but instead lots of healthy baked goods, killer savory recipes, and a big dose of realness.

So you might be wondering “why is your blog called KALEJUNKIE® if there’s no kale?” Let me take you on a little journey and tell you…

I started my food blog almost 6 years ago on Instagram, as a hobby while I was on maternity leave, as I began to heal from a 15 + year eating disorder that I successfully hid from everyone, including my husband.

At the time, I felt stuck in my career as an Employment Defense Lawyer, and over time, food became the only thing I could control. I was miserable—and my definition of “healthy” was a diet consisting solely of kale salads, green juice, foods with few carbs, and to be honest, that’s pretty much it—and so, the name KALEJUNKIE was born, and I was actually pretty proud of it.

But over time, my relationship with food began to shift. I learned to stop restricting food, and instead gave myself permission to enjoy all food, including yummy desserts that I previously avoided like the plague. I then very quickly found myself spending hours upon hours in the kitchen, teaching myself how to develop simple, easy recipes that taste great.

These days, I still love a loaded kale salad and green juice; in fact, you’ve got to try my Ultimate Kale Salad with Creamy Lemon Tahini Dressing. It’s just that these days, my definition of “healthy” has expanded to encompass more than just greens and veggies – so much more.

“So, Nicole, if that’s the story and there’s hardly any kale, why not just rebrand to reflect your current sitch?” Because I always want to remember my journey and where I started. I think that too often we run from our past as we propel ourselves forward, trying to erase painful moments in our lives. For me, my struggle is my strength, and the name KALEJUNKIE is a powerful reminder of that.
