Start by peeling your bananas and slicing the bottom off of each one.
Next, push your popsicle stick into the cut banana. If you don't have popsicle sticks, that is okay - simply omit this step, and make this recipe without them!
Next, line a baking sheet or a plate with parchment paper and place your bananas on top of them.
Place them in the freezer for approximately two hours, or until they're fully frozen.
While the bananas are freezing, prepare your chocolate. In a microwave safe bowl, add the chocolate chips and coconut oil. Microwave in 2 or 3, 30-second increments, making sure to stir in between until the chocolate is fully melted.
If you do not have a microwave, you can also melt the chocolate on the stove, using the double-boiler method.
Once the chocolate is fully melted, dip each frozen banana into the chocolate and then top with sprinkles (or other toppings) as desired.
Place the bananas back onto the baking sheet, and then freeze them until you're ready to eat, and enjoy!
