First, prepare the salsa.
Chop all of the salsa ingredients listed above, and toss everything together in a bowl.
Season with salt and pepper to taste.
Place the bowl in the refrigerator to marinate while you make the salmon.
Next, prepare the salmon.
In a small bowl, mix together the garlic powder, chili powder, salt and pepper.
Rub the top and bottom of the salmon filets with the oil, and the coat the top of the salmon filets with the seasonings.
Grease a cast iron skillet with oil—don’t skimp on the oil because you don’t want the salmon to stick.
Turn the stove on to medium heat.
Once the pan is nice and hot, add the salmon filets skin side down (you want to get that skin nice and crispy before flipping to the other side).
After about 6 minutes, use a spatula and flip the salmon filets to the other side.
Cook for another 5-6 minutes, until the salmon is done to your liking.
Plate the salmon filets, drizzle with the lime juice, and top with the mango salsa.
Add any additional salt and pepper as needed.
