- First, prepare the salsa. 
- Chop all of the salsa ingredients listed above, and toss everything together in a bowl. 
- Season with salt and pepper to taste. 
- Place the bowl in the refrigerator to marinate while you make the salmon. 
- Next, prepare the salmon. 
- In a small bowl, mix together the garlic powder, chili powder, salt and pepper. 
- Rub the top and bottom of the salmon filets with the oil, and the coat the top of the salmon filets with the seasonings. 
- Grease a cast iron skillet with oil—don’t skimp on the oil because you don’t want the salmon to stick. 
- Turn the stove on to medium heat. 
- Once the pan is nice and hot, add the salmon filets skin side down (you want to get that skin nice and crispy before flipping to the other side). 
- After about 6 minutes, use a spatula and flip the salmon filets to the other side. 
- Cook for another 5-6 minutes, until the salmon is done to your liking. 
- Plate the salmon filets, drizzle with the lime juice, and top with the mango salsa. 
- Add any additional salt and pepper as needed. 
- Enjoy!
