Instructions
To make this chicken salad, start with the dressing. Add the Greek yogurt, shredded parmesan, pepperoncini juice, red wine vinegar, garlic powder, oregano, kosher salt, and black pepper to a medium bowl and whisk until smooth and creamy.
Give it a taste and adjust the seasonings as needed. If it feels too thick, whisk in a tablespoon or two of water until it reaches your desired consistency. Set it aside.
Next, prep the salad. Remove the skin from the rotisserie chicken, pull the meat apart, and chop it into small pieces.
Chop the salami and pepperoni into small pieces, finely dice the red onion, chop the pepperoncini, and halve the cherry tomatoes. Add everything to a large bowl.
Pour the dressing over the salad ingredients and toss until everything is fully coated. Serve it right away, or store it in a covered container in the fridge for up to one week.
