One Bowl Protein Pumpkin Overnight Oats

These Pumpkin Protein Overnight Oats are my favorite way to meal prep breakfast for the week. Stir everything together in one bowl, divide it between jars, and wake up to thick, creamy oats that taste like pumpkin pie.

Ingredients

  • 2 cups quick cook oats ⁣
  • ¼ cup chia seeds⁣
  • ¾ cup pumpkin puree⁣
  • 2 cups almond milk or milk of choice⁣
  • ½ cup protein powder of choice⁣
  • 2 cups fat free greek yogurt ⁣
  • ¼ cup maple syrup or 2 packets @pocayourworld pumpkin spice syrup⁣
  • 2 tablespoons pumpkin pie spice⁣
  • 1 tablespoon vanilla extract⁣
  • so delicious coco whip⁣ optional topping

Instructions

  • To make these overnight oats, grab your largest mixing bowl and add the quick-cook oats, chia seeds, pumpkin puree, almond milk, protein powder, Greek yogurt, maple syrup (or POCA syrup), pumpkin pie spice, and vanilla extract.
  • Stir until everything is fully combined and there are no streaks of yogurt or clumps of protein powder left.
  • Now taste it. This is when I decide whether it needs another shake of pumpkin pie spice or a little more sweetness, so adjust it to your liking before it goes in the fridge.
  • Divide the mixture evenly between four jars. If you’re using coconut whip, add a scoop to the top of each jar. Cover the jars and refrigerate them overnight, or for at least 3 hours, until the oats and chia seeds have soaked up the liquid and everything is thick and creamy.
  • When you’re ready to eat, grab a jar, give it a stir, and enjoy!
