Paleo Funfetti Sugar Cookies

There's nothing more fun than Funfetti, and these Paleo Funfetti Sugar Cookies are a real treat! Okay, maybe they aren't exactly 100% paleo because they are rolled in a tiny bit of white sugar, but live a little. Consider them paleo-ISH and go make this recipe ASAP!
These cookies are the perfect healthier take on your favorite funfetti treat(s), and I promise it doesn't disappoint. If you're ready to make something delicious that will feed your body and your inner-child, then this recipe is for YOU.

Ingredients

  • 1 ⅔ Cups Almond Flour
  • 3 Tablespoons Coconut Flour
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Cream of Tartar
  • ½ Teaspoon Salt
  • Cup Coconut Oil melted and cooled
  • Cup Maple Syrup
  • 1 Tablespoon Almond Extract
  • ½ Cup Rainbow Sprinkles plus extra for topping
  • ½ Cup Cane Sugar optional

Instructions

  • Preheat oven to 350 F.
  • Line a baking sheet with parchment paper and set aside.
  • In a large bowl, stir together the almond flour, coconut flour, baking soda, cream of tartar, and salt.
  • Next, add in the melted/cooled coconut oil, maple syrup, and almond extract, and stir until mixed well.
  • Add sprinkles to the batter.
  • Use a cookie scoop and form 12-14 cookies (you can make them bigger or smaller, depending on your preference).
  • Roll each one in the cane sugar.
  • Use the palm of your hand or bottom of a glass to slightly flatten them, they wont spread much during baking.
  • Press a few more sprinkles on top of each one.
  • Bake for 9-10 minutes, they should be lightly golden around the edges and soft!
  • Let cool for about 10-15 minutes, and then enjoy!
