These No-Bake Peanut Butter Protein Rice Crispy Bars pack 10 grams of protein into a crispy cereal base, topped with a peanut butter chocolate layer and flaky salt.
Start by adding the honey and coconut oil to a large pot over medium-low heat. Whisk gently until they're combined, then add the peanut butter and keep whisking until the mixture is smooth.
Remove the pot from the heat, then stir in the rice crispy cereal and hemp hearts until everything is fully coated.
Transfer the mixture to a parchment-lined 8x8 baking dish, or a well-greased pan if you'd rather skip the parchment. Press the cereal firmly and evenly into the pan using a spatula.
If it starts sticking to your hands, rub a little oil on your palms first and it'll press down easily.
For the topping, add the chocolate chips and peanut butter to a small microwave-safe bowl. Microwave in 30-second increments, stirring in between, until it's completely smooth, usually 2 to 3 rounds.
Pour the melted chocolate evenly over the pressed cereal layer and smooth it out.
Freeze for at least 3 hours, but these bars are a little more delicate than a classic crispy treat, so I actually recommend freezing overnight. It makes for a much cleaner slice and keeps the bars from crumbling apart.
Once they're set, remove from the pan, slice into 9 squares, and finish with flaky salt if you're using it. Store any leftovers in a covered container in the fridge or freezer.
