1 1/2cupssoaked cashews (Note: you do not need to soak them overnight. The quick hack is to soak them in super hot water and they will get soft in a matter of ten min!)
1/4cupnutritional yeast
1tspsalt
3garlic cloves
1cupnon dairy milk (I used almond milk)
1tbsparrowroot powder (this is optional, but so great for giving it that wonderful creamy texture)
Instructions
Blend all ingredients on high speed for 2-3 minutes and toss your pasta in the sauce!
If you want to upgrade, for the sausage, it's my fav kind from@truestoryfoods, even my picky toddler is obsessed. They are already cooked so basically just brown them in a skillet! I took one package of organic jalapeño sausages, sliced them, and sautéd in a little avocado oil. Served over a bed of arugula and topped with cilantro micro greens.
