PALEO ALFREDO SAUCE

Ingredients

  • 1 1/2 cups soaked cashews (Note: you do not need to soak them overnight. The quick hack is to soak them in super hot water and they will get soft in a matter of ten min!)
  • 1/4 cup nutritional yeast
  • 1 tsp salt
  • 3 garlic cloves
  • 1 cup non dairy milk (I used almond milk)
  • 1 tbsp arrowroot powder (this is optional, but so great for giving it that wonderful creamy texture)

Instructions

  • Blend all ingredients on high speed for 2-3 minutes and toss your pasta in the sauce!
  • If you want to upgrade, for the sausage, it's my fav kind from@truestoryfoods, even my picky toddler is obsessed. They are already cooked so basically just brown them in a skillet! I took one package of organic jalapeño sausages, sliced them, and sautéd in a little avocado oil. Served over a bed of arugula and topped with cilantro micro greens.
