Prepare gnocchi according to my method, which is:Take gnocchi out of the freezer and let thaw at room temperature for approximately 20 minutes. Next, heat a non-stick pan on the stove over medium heat, and spray the pan generously with avocado oil/coconut oil. Add the gnocchi, and let brown, flipping them back and forth for about 10-15 minutes, until nicely browned. f you want an even bigger flavor explosion and an extra nutrient boost, try adding 1-2 tablespoons of bone broth to the pan as you cook them! SO GOOD.
Slice your sausage into 1/2 inch slices, and add to the pan with the already cooked gnocchi. Note, the sausage is already fully cooked, so basically you are just looking to warm it.
In a small pan on the stove, heat the pasta sauce. Once warm, pour over the sausage and cauliflower gnocchi mixture.
Add micro greens of choice and season with salt and pepper as needed.ENJOY!
