CAULIFLOWER GNOCCHI WITH SAUSAGE & RED SAUCE

  • Prepare gnocchi according to my method, which is:Take gnocchi out of the freezer and let thaw at room temperature for approximately 20 minutes. Next, heat a non-stick pan on the stove over medium heat, and spray the pan generously with avocado oil/coconut oil. Add the gnocchi, and let brown, flipping them back and forth for about 10-15 minutes, until nicely browned. f you want an even bigger flavor explosion and an extra nutrient boost, try adding 1-2 tablespoons of bone broth to the pan as you cook them! SO GOOD.
  • Slice your sausage into 1/2 inch slices, and add to the pan with the already cooked gnocchi. Note, the sausage is already fully cooked, so basically you are just looking to warm it.
  • In a small pan on the stove, heat the pasta sauce. Once warm, pour over the sausage and cauliflower gnocchi mixture. 
  • Add micro greens of choice and season with salt and pepper as needed.ENJOY!
