Gingerbread Apple Baked Oatmeal

When you can't decide if you want breakfast or dessert, you need this Gingerbread Apple Baked Oatmeal. Bake this decadent oatmeal in one dish, then cut it into square and enjoy for breakfast or dessert. It's so flavorful and so moist, it's hard to believe that it's made with ingredients that are actually good for you!

Ingredients

  • 2 cups gluten free rolled oats
  • ¾ teaspoon baking powder
  • 1 teaspoon cinnamon
  • ¾ teaspoon ground ginger
  • ½ teaspoon nutmeg
  • ½ teaspoon sea salt
  • 2 cups almond milk
  • 1 banana mashed
  • 3 tablespoons maple syrup
  • 1 tablespoon molasses
  • 1 egg or flax egg
  • 1 teaspoon vanilla extract
  • 1 cup apple diced into small pieces, plus slices for the top
  • ¼ cup chocolate chips

Chocolate Drizzle

  • 1/4 cup chocolate chips
  • 1 tsp coconut oil

Instructions

  • Preheat oven to 375 F.
  • Spray an 8x8 inch square baking dish with oil or cooking spray.
  • In a medium bowl, mix together the oats, baking powder, cinnamon, ginger, nutmeg and salt.
  • In another bowl, whisk together the almond milk, mashed banana, maple syrup, molasses, egg, and vanilla.
  • Add the dry ingredients to the wet ingredients and stir to combine, making sure everything is well mixed.
  • Stir in the diced apple and chocolate chips.
  • Transfer oatmeal mixture into the prepared baking dish.
  • Add apple slices on top.
  • Bake for 30 minutes, until the top is golden and center is set.
  • Remove from the oven and let cool for a few minutes.
  • Enjoy!
