There is nothing that's more quintessential to Fall for me than pumpkin butter. Sorry pumpkin spice latte fans, but for me, pumpkin butter is where it's AT. And my Healthy Pumpkin Butter is so delicious, so simple, and so easy to make! Prep this ahead of time and keep it in your fridge for whenever you need an extra dose of pumpkin-y goodness!
- 2 Cups Pumpkin Puree
- ½ Cup Honey
- 2 Teaspoons Vanilla Extract
- 2 Teaspoons Pumpkin Pie Spice if you don't have any, you can make your own!
- 1 Lemon juiced
Head a saucepan on the stove over low heat.
Add all of your ingredients to the pan and stir until everything is well-incorporated.
Let cook for about 4-5 minutes, stirring occasionally, until the pumpkin butter changes colors from a bright orange to a light brown.
Remove the pan from heat, and let your pumpkin butter cool.
Serve on toast, with fruit, or however you’d like. Store in a jar in the fridge for up to one week, and enjoy!
