But for this viral recipe, we're giving that classic egg recipe a modern twist, with tangy feta cheese and simple, plant-based breakfast taco ingredients. This Viral Crispy Feta Fried Egg with Arugula and Avocado are viral for a reason. Made with crispy feta, a runny, fried egg, and arugula and avocado layered on top of a grain-free tortilla, it's a heathy and delicious breakfast that comes together in under 10 minutes.
1 Nonstick pan
A good nonstick pan is essential for this recipe. I love this one!
- ⅓ Cup Feta crumbled
- 1 Egg
- ¼ Teaspoon Black Pepper
- ¼ Teaspoon Crushed Red Pepper Flakes
- ½ Avocado mashed
- 1 Cup Arugula tossed in lemon juice and olive oil
- 1 Grain-Free Tortilla I love the Siete brand!
Start by heating a nonstick pan, on the stove, over medium heat.
While the pan is heating up, crumble the feta cheese by placing the brick of feta into a bowl and using a fork to break it into small chunks.
Once the pan is hot, add in the crumbled feta cheese in a circular shape.
Next, crack an egg into the center of the feta cheese ring and season with black pepper and crushed red pepper flakes. I recommend skipping the salt, as the feta cheese is already salty!
Allow the egg to cook until the edges are nice and crispy - this should take approximately 2-5 minutes.
While the egg is cooking, prepare the breakfast taco.
Warm the tortilla on the stove, over an open flame, until it's soft and pliable.
Next, mash the avocado and spread it across the tortilla.
Add the arugula to a small bowl and toss it with olive oil and lemon juice. Then, place it on top of the tortilla.
Finally, once the egg is done, remove it from the pan and add it to the tortilla. Serve immediately, and enjoy!
