There are times in life when you need to drop what you are doing and get in the kitchen. This is one of those times. I’ve created the most perfect recipe for a One Bowl, Gluten-Free Pecan Chocolate Chip Bread, and it’s one of those recipes that you will come back to over and over again. It’s super versatile, and you can pretty much add any nuts you want, or just leave them out all together for the most simple and delicious banana bread.
So let’s cut to the chase and get right to it.
All you need are three ripe bananas, and a few other things.
1 ¼cupgluten free flour (I like Bob’s Red MillGluten Free 1:1 flour)
1cupgluten free oats
¼cupchopped pecans (plus more for topping)
½cupdairy free chocolate chips (plus more for topping)
Instructions
Preheat your oven to 350 degrees. Next, line a 9 x 5 inch loaf pan with parchment paper (pro tip: spray your loaf pan with coconut oil or rub the pan with coconut oil BEFORE putting the parchment paper in—the oil holds the parchment paper in place!)
In a large bowl, mash your bananas.
Then add the remaining ingredients and mix until well combined.
Pour the batter into the loaf pan and top with lots of extra chocolate chips and chopped pecans.
Bake for 75 minutes or until toothpick comes out clean. Get ready for your life to be changed!Enjoy!XO
