    BUTTERNUT SQUASH SOUP - INGREDIENTS1 package True Story Foods Sweet Italian Sausage (or sausage of choice)3 small red potatoes, roughly chopped3 carrots, roughly chopped1 white onion, roughly chopped2 cups butternut squash, roughly chopped3 tb avocado oil (or oil of choice)1/2 tsp cinnamon1/8 tsp ground ginger1/8 tsp nutmeg1/8 tsp sage3 cups chicken broth (or bone broth)3/4 cup coconut milk (full fat)salt and pepper to taste

    Soup season is FINALLY upon us, and I couldn’t be more excited! Yes, this is coming from the gal who’s obsessed with muffins and cookies. And I’m bringing you one of my favorites. A creamy, hearty soup made with carrots, butternut squash, onions, potato, and some simple seasonings.

    The soup itself is paleo, Whole 30 compliant, and vegan. I added chopped sweet Italian chicken sausage from True Story Foods as a garnish on the top, and it really took this dish to the next level. But not to worry, if sausage isn’t your thing, you can omit all together, or add greens, pumpkin seeds, or even some quinoa. The possibilities are endless!

    BUTTERNUT SQUASH SOUP

    Ingredients

    • 1 package True Story Foods Sweet Italian Sausage (or sausage of choice)
    • 3 small red potatoes, roughly chopped
    • 3 carrots, roughly chopped
    • 1 white onion, roughly chopped
    • 2 cups butternut squash, roughly chopped
    • 3 tbsp avocado oil (or oil of choice)
    • ½ tsp cinnamon
    • ⅛ tsp ground ginger
    • ⅛ tsp nutmeg
    • ⅛ tsp sage
    • 3 cups chicken broth (or bone broth)
    • ¾ cup coconut milk (full fat)
    • salt and pepper to taste

    Instructions 

    1. Preheat oven to 375.
    2. Line a baking sheet with parchment paper.
    3. Place all of the chopped vegetables on the baking sheet (potatoes, carrots, butternut squash, onion).
    4. Drizzle with avocado oil and sprinkle with salt and pepper.
    5. Roast vegetables in the oven for approximately 30 minutes.
    6. Remove from oven and let cool.
    7. Meanwhile, chop two sausages into small pieces, and sauté them in a teaspoon of avocado oil in a pan on the stove. Remove from the heat once brown (approximately 3-5 minutes).
    8. Place roasted vegetables in your Vitamix or high speed blender, along with the chicken broth/bone broth, spices, and coconut milk.
    9. Blend for 2-3 minutes.
    10. Pour soup into bowls and garnish with sausage and any other toppings you’d like! Enjoy!
