When all your friends are doing the Whole30 and you secretly want in too. CASHEW CRUSTED CHICKEN TENDERS are what’s up.

Ingredients
- 2 lbs Butcher Box chicken tenders
- ¾ cup raw cashews
- ½ cup unsweetened shredded coconut
- 2 eggs, whisked
- ½ cup coconut flour
- ½ tsp salt
- 2 tbsp Primal Palate taco seasoning
Instructions
- Preheat oven to 350.
- Line baking sheet with parchment paper.
- In a blender, add the cashews, coconut, taco seasoning, and salt. pulse until ground, but make sure to leave some texture!
- Whisk eggs in a bowl and set aside.
- Put coconut flour in a bowl and set aside.
- Pour cashew mixture in a bowl and set aside.
- Dip each piece of chicken in the 1) coconut flour, then 2) egg, then 3) roll in the cashew mixture. lay flat on baking sheet.
- Bake 20-25 minutes until cooked through.
