CHIPOTLE CHICKEN FAJITAS - INGREDIENTS2 lbs chicken tenders1 of each color bell peppers (green, yellow, red, orange)1 onion4 cloves garlic, mashed3 tb olive oil1 limecilantro to tasteFOR THE SEASONING:1/2 tsp chipotle powder1 tsp chili powder1 tsp paprika2 tb cumin1 tsp sea salt1/2 tsp pepper

Ingredients

  • 2 lbs chicken tenders
  • 1 of each color bell peppers (green, yellow, red, orange)
  • 1 onion
  • 4 cloves garlic, mashed
  • 3 tbsp olive oil
  • 1 lime
  • cilantro to taste

FOR THE SEASONING:

  • 1/2 tsp chipotle powder
  • 1 tsp chili powder
  • 1 tsp paprika
  • 2 tbsp cumin
  • 1 tsp sea salt
  • 1/2 tsp pepper

Instructions

  • Preheat oven to 400.
  • Prepare seasoning by mixing ingredients in a medium size bowl. Set aside.
  • Slice bell peppers and onions into strips and place into a large bowl.
  • Slice chicken tenders into smaller strips and add to the bowl.
  • Add mashed garlic, followed by the olive oil.
  • Now pour the seasoning over everything and make sure to coat evenly.
  • Transfer to a baking sheet.
  • Bake for 25 minutes or so, moving things around/flipping at the halfway point.
  • Add chopped cilantro and drizzle lime juice on top.
