Fat bombs are all the rage these days, and for good reason. They are truly the perfect snack to keep yourself fueled properly in between meals and eliminate cravings for sugary goods. When I first heard about this trend, I admit, I was kind of skeptical of eating so much fat in a single serving, especially in the form of a BALL. But once I tried one, and experienced first hand the fact that my hunger was tamed and I had no cravings, I’ve been on a spree of trying all the different combinations.
These fat bombs are perfect whether you follow a Keto diet or not. If you aren’t familiar with the Keto diet, it’s basically a low-carb, high-fat food plan. After following this diet for a week or so, the body enters a state called “ketosis,” in which your body burns more fat for energy, vs tapping into carbohydrate stores that it would normally use. The result is that you feel fuller longer, and cravings are curbed.
Personally, I don’t follow the Keto diet or any diet in particular other than one that makes me feel good, but I am always looking for treats that keep my full and don’t spike my blood insulin levels and have me reaching for a box of cookies.
So meet my Peanut Butter Keto Bombs. They are made with just a handful of ingredients: shredded coconut, cocoa powder, peanut butter, vanilla extract, sea salt, and the magic ingredient: Vital Farms pasture-raised butter. They are also no-bake, so even in the hot summer months, you don’t need to fire up that oven.
You might be thinking, butter? But I’m afraid of butter. You shouldn’t be — those days of fearing the butter are gone. High quality butter is not your enemy.
Note – these are not sweetened at all, which is how I personally like them. But feel free to add a few drops of stevia or a tablespoon of maple syrup to the batter if you want a little sweetness!

Ingredients
- 1 cup creamy peanut butter
- 2 ½ tsp vanilla extract
- 2 tbsp unsweetened cocoa powder
- 2 tbsp salted Vital Farms butter, melted. If using unsalted, add 1/4 tsp salt
- 2 cups unsweetened shredded coconut – I prefer finely shredded coconut over the large chunky kind
- OPTIONAL TOPPING: Crumbled keto friendly chocolate – I like the Eating Evolved brand
- OPTIONAL SWEETNESS: Add a few drops of stevia or 1 tb maple syrup
Instructions
- Line a baking sheet with parchment paper or a silpat
- In a medium mixing bowl, add all the ingredients and mix together well.
- Use a cookie scoop to form balls and place them on the baking sheet.
- Sprinkle chopped chocolate on top, and freeze for 30 minutes.
