Mom and Dad are going away for 24 hours, kid free, for the first time ever, which would be almost 4 YEARS (since having G!) Say wuttttttt!!! So excited! I’m leaving the boys with this MIXED BERRY CHOCOLATE CHIP OATMEAL BAKE so they don’t forget me. I already ate a big hunk out of it, it’s. SO good! The only problem is that I wasn’t sure what to expect and I didn’t write down all the measurements. I thought it good enough to share, roughly, here’s what i did. You need to make it, it’s basically DESSERT FOR BREAKFAST.

Ingredients
- 2 bananas
- 1 egg
- 1 ½ cups gluten free rolled oats
- 1 cup almond milk
- ½ cup dairy free chocolate chips
- ¾ cup mixed berries (I used razzies and blackberries)
- 2 tbsp melted coconut oil (or butter)
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 1 tsp vanilla extract
- 2 tsp baking powder
Instructions
- Put the bananas and the egg in a blender to mash and then pour contents into a bowl.
- Add the rest of the ingredients and stir together well.
- Pour contents into baking dish of choice (I used a pie dish).
- Bake at 350 for 30-ish minutes.
