
I made some NO BAKE PEANUT BUTTER CHOCOLATE OATMEAL BARS the other day and I’m finally getting around to posting—this shiz takes a long time! Between making the recipe, testing it again (and maybe tweaking it yet again); photographing, editing, sheeshhh I’m tired, where’s my vacay. But they are so good, I couldn’t wait any longer! This recipe makes 24 small bars or 12 large ones (I made large ones in case you can’t tell)

Ingredients
- ½ cup coconut sugar
- ¾ cup coconut oil or butter
- ½ tsp vanilla extract
- 2 ½ cups gluten free rolled oats
- ¾ cup Spread The Love Peanut Butter
- ½ cup dairy free chocolate chips
- 1 scoop Further Food Chocolate Collagen (optional)
Instructions
- Line an 8×8 or 9×11 baking dish with parchment paper. Spray the inside of the dish with oil so the paper sticks.
- In a small pan on the stove, melt coconut oil/butter, vanilla, and coconut sugar over low heat.
- Stir for a few minutes. add the oats, stir again, and cover for 5-6 minutes. Make sure this is on low heat.
- Transfer 3/4 of the mixture to the bottom of the baking dish and press down with a spatula.
- Next, put the chocolate, peanut butter, and collagen (if using) into a microwave safe bowl.
- Melt in 30 second intervals.
- Stir together, leaving some PB clumps!
- Pour over the oat mixture and then top with remaining oats.
- Press down with spatula.
- Refrigerate for at least 4 hours before cutting into bars!
- Store in the refrigerator or freezer.Enjoy!
