    NO BAKE PEANUT BUTTER CHOCOLATE OATMEAL BARS - INGREDIENTS1/2 cup coconut sugar3/4 cup coconut oil or butter1/2 tsp vanilla extract2 1/2 cups gluten free rolled oats3/4 cup Spread The Love Peanut Butter1/2 cup dairy free chocolate chips1 scoop Further Food Chocolate Collagen (optional)

    I made some NO BAKE PEANUT BUTTER CHOCOLATE OATMEAL BARS the other day and I’m finally getting around to posting—this shiz takes a long time! Between making the recipe, testing it again (and maybe tweaking it yet again); photographing, editing, sheeshhh I’m tired, where’s my vacay. But they are so good, I couldn’t wait any longer! This recipe makes 24 small bars or 12 large ones (I made large ones in case you can’t tell)

    NO BAKE PEANUT BUTTER CHOCOLATE OATMEAL BARS

    Ingredients

    • ½ cup coconut sugar
    • ¾ cup coconut oil or butter
    • ½ tsp vanilla extract
    • 2 ½ cups gluten free rolled oats
    • ¾ cup Spread The Love Peanut Butter
    • ½ cup dairy free chocolate chips
    • 1 scoop Further Food Chocolate Collagen (optional)

    Instructions 

    1. Line an 8×8 or 9×11 baking dish with parchment paper. Spray the inside of the dish with oil so the paper sticks.
    2. In a small pan on the stove, melt coconut oil/butter, vanilla, and coconut sugar over low heat.
    3. Stir for a few minutes. add the oats, stir again, and cover for 5-6 minutes. Make sure this is on low heat.
    4. Transfer 3/4 of the mixture to the bottom of the baking dish and press down with a spatula.
    5. Next, put the chocolate, peanut butter, and collagen (if using) into a microwave safe bowl.
    6. Melt in 30 second intervals.
    7. Stir together, leaving some PB clumps!
    8. Pour over the oat mixture and then top with remaining oats.
    9. Press down with spatula.
    10. Refrigerate for at least 4 hours before cutting into bars!
    11. Store in the refrigerator or freezer.Enjoy!
