VEGAN OAT FLOUR PANCAKES
INGREDIENTS
1 cup oat flour
1 tsp baking powder
1 tsp baking soda
a pinch of sea salt
1 cup dairy free milk
3 tb maple syrup
2 tsp melted coconut oil
1 tb flaxseed meal
1 tsp apple cider
vinegar
I made pancakes for the first time in FOREVER and now Iāve gotta work on digesting all of them before hitting up Barryās this morning. Next time Iāll eat just one beforehand and save the rest for after classāNote. To. Self.
In a medium bowl, whisk together 1 cup oat flour, 1 tsp baking powder, 1 tsp baking soda, and a pinch of sea salt.
In another bowl, whisk together 1 cup dairy free milk, 3 tb maple syrup, 2 tsp melted coconut oil, 1 tb flaxseed meal, 1 tsp apple cider vinegar.
Pour wet ingredients into the dry, and mix until combined.
Make pancakes in a pan over medium heat, flipping once the pancakes start to bubble.
I topped mine with maple syrup, coconut yogurt, blueberries and banana!
