One Pan Roasted Potatoes and Sausage

    ONE PAN ROASTED POTATOES & SAUSAGE - INGREDIENTS1 package True Story Foods Sweet Italian Sausage (or sausage of choice)3 small red potatoes1 cup baby carrots1 white onion, roughly chopped1 bunch organic asparagus1 tsp salt1 tsp garlic powder1/2 tsp pepper1/4 cup olive oil*optional - your seasonings of choice. For this one, I really like sprinkling Primal Palate Adobo Seasoning, but get creative and listen to your cravings!

    ONE PAN ROASTED POTATOES & SAUSAGE

    INGREDIENTS

    1 package True Story Foods Sweet Italian Sausage (or sausage of choice)
    3 small red potatoes
    1 cup baby carrots
    1 white onion, roughly chopped
    1 bunch organic asparagus
    1 tsp salt
    1 tsp garlic powder
    1/2 tsp pepper
    1/4 cup olive oil
    *optional – your seasonings of choice. For this one, I really like sprinkling Primal Palate Adobo Seasoning, but get creative and listen to your cravings!

     As a busy mama, I am always in search of the best meal hacks around. I love meals that are healthy and nutritious, and easy to make. That’s why one pan and one pot meals are my absolute favorite. There is little clean up (I mean who likes to do dishes?!), the meals feed us for a few days (perfect for your meal preps), and they just taste delicious. It’s always the juices from the meats that mesh so well with the veggies, once you go one-pan, you’ll never go back to cooking any other way.

    Today I’m using my favorite sausages from True Story Foods. This brand is a family fav. We love all of their lunch meats, sausages, and even their bacon! The thing I love most is that they are made with clean ingredients, with no additives or nitrates. Today’s recipe uses their Sweet Italian Sausage, that actually contains no sugar. It’s simple and delicious. Don’t have True Story sausages by you? No problem! That’s the best part about these one pan meals – use what ever your heart desires!

    Preheat oven to 400.
    Line a baking sheet with parchment paper so the veggies don’t stick.
    Clean and scrub your potatoes and cut into quarters, set aside.
    Roughly chop your onion, set aside.
    Slice your sausage into 1/2 coins, set aside.
    Wash your asparagus, trim ends, and cut into 2 inch pieces.
    In a small bowl, add the carrots and potatoes. Pour about half of the olive oil over the carrots and potatoes, and sprinkle with seasonings of choice (as stated above, I used garlic powder, salt, pepper, and Primal Palate Adobo Seasoning). Using tongs, coat everything well.
    Place carrots and potatoes on the baking sheet and roast for 20 minutes. 
    Remove from oven, and using a spatula, push them to one side of the pan.
    Next, add remaining ingredients (asparagus, onion, and sausage) to the same bowl and add remaining olive oil and any additional seasonings you’d like. Coat well and add to the same roasting pan along with the carrots and potatoes.
    Use the spatula to mix everything together on the baking sheet.  
    Roast for another 10-15 minutes.
    That’s it!

      Looks good, going to try tonight. I think an extra line from a different recipe sneaked in? It says "Heat 1 tb olive oil in your cast iron skillet, over medium heat" which seems to be a non sequitur within the recipe.
