Ok, so on my blog I have a fantastic cinnamon rolls recipe, a cinnamon roll cake recipe, and today we are adding a single serving cinnamon roll mug cake to the collection – YAY! I think I have finally covered my bases. The reality is that all three of these recipes are killer. The only difference is that this one comes together in about five minutes and feeds one, whereas the other two are a tad bit labor intensive, especially if you just want dessert for one.

This particular recipe is also nut free, which makes it great for people with nut allergies or avoiding nuts. If you don’t have a nut allergy, almond flour will work, and although I have not tested, I’m pretty sure almost any flour should work in the same ratio. Experiment and have fun. Just know that the consistency you are looking for is a fluffy cake-type-thing and not a dense hockey puck. You heard it here first, okay?

Can you use a flax egg instead of an egg? YES. I have tested it and can confirm that it works. To make a flax egg, all you have to do is grab a bowl and whisk together 1 tablespoon of ground flax and 3 tablespoons water, and let it sit for about five minutes until the mixture begins to thicken.

SERVES 1 cinnamon roll mug cake

Ingredients

Mug cake:

  • 1 ½ tablespoons coconut flour or almond flour
  • ½ teaspoon baking powder
  • 1 tablespoon coconut sugar or regular sugar
  • ½ teaspoon cinnamon
  • 1 egg
  • 1 tablespoon almond milk
  • ½ tsp vanilla extract
  • ⁣1 tablespoon melted butter or coconut oil or vegan butter

Glaze:

  • 2 tablespoons powdered sugar
  • ½ teaspoon water

Instructions

  • Spray a mug with non-stick spray of choice and set aside.
  • In a small bowl, mix together the dry ingredients.
  • Next, add the wet ingredients and whisk together well.
  • The batter should be thick, but not too thick, and if it is too thick, add a touch more almond milk.
  • Transfer the batter into the mug.
  • Sprinkle a little extra cinnamon and sugar on top, and then take the back of a utensil and make a swirl.
  • Microwave for 60 seconds. If using oven, bake at 350 for 12-14 minutes.
  • Make the glaze, by adding the powdered sugar and water to a small bowl, and mixing until there are no clumps.
  • Once the mug cake is cool - or relatively cool - drizzle the glaze on top.
  • Enjoy!

  2. Does anyone know if using the microwave or using the oven would give the best cinnamon roll consistency? Or are they both sort of the same?

    • Hi Molly! Both will yield the same result in terms of the consistency! Microwave is just quicker! Enjoy!

  3. just made this with flax egg…. flavor is awesome. texture would definitely be more smooth with a real egg, so maybe I’ll try it that way next time because there will definitely be a next time! i did not add the extra cinnamon & sugar on top before microwaving because i forgot (i was in too big of a hurry to make it so i could eat it!), but it was certainly cinnamon roll-y enough without it. this totally satisfied my carby sweets craving and in such a healthy way!
