Ingredients
- 1 16 oz package of penne pasta of choice
- ¼ cup olive oil
- 6 garlic cloves, mashed
- 1 tsp red chili flakes
- 2-3 cup organic arugula
- 1 lemon, juiced and zested
- ½ cups grated parmesan cheese
- 1 tsp sea salt
Instructions
- Prepare pasta according to package instructions.
- When pasta is done, reserve 1/2 cup of the pasta water.
- While the pasta is cooking, heat the olive oil in a large pan over medium-low heat.
- Add garlic and stir for about 2 minutes, stirring but being careful not to let it burn.
- Add red chili flakes and sea salt and stir for one more minute.
- Remove from heat and set aside.
- Add the cooked pasta to the pan with the olive oil/ garlic sauce, mixing to coat well.
- Add the lemon juice, lemon zest, arugula, reserved pasta water, and parmesan cheese, stirring to coat everything well.
- Serve and enjoy!!!!
