Stepping into the weekend with this quick and easy gluten free Strawberry Upside Down Cake, because it’s strawberry season and why. the. heck. not. Here’s how:

Instructions

  • Preheat oven to 350. 
  • Rub a 10 inch round pan with avocado oil. 
  • Wash strawberries, cut into quarters, and place in a bowl. 
  • Add arrowroot and coconut sugar and mix well. 
  • Pour strawberries into the pan. 
  • In the same bowl, prepare cake mix according to package instructions. 
  • Pour batter over the strawberries and bake for 35 minutes. 
  • Remove from the oven and let cool before flipping it over. 
  • Get ready for a perfectly lightly sweet, ooey gooey yummy cake, you’re welcome!
