Ingredients

  • 1 cup almond flour⁣
  • 1 12 oz package frozen strawberries (about 2 cups)⁣
  • 1 tbsp arrowroot flour (or tapioca flour or cornstarch)⁣
  • ¼ cup coconut sugar⁣
  • 1 tsp cinnamon⁣
  • 1 egg⁣
  • ¼ cup coconut oil, melted⁣
  • 1 tsp vanilla extract⁣
  • 1 tsp baking powder⁣
  • ½ cup walnuts, roughly chopped⁣
  • ½ tsp sea salt⁣

Instructions

  • Preheat oven to 375. 
  • Line an 8x8 or 9x12 baking dish with parchment paper (grease the inside of the pan first, so that the paper sticks). 
  • In a medium bowl, add the strawberries, arrowroot flour, about half of the coconut sugar, and the cinnamon.
  • Transfer the strawberry mixture to the baking dish. 
  • In the same bowl, mix together the almond flour, remaining coconut sugar, and baking powder. 
  • Next, add the egg, melted coconut oil, and vanilla extract. 
  • Whisk everything until fully incorporated. 
  • Add chopped walnuts.
  • Use a spoon and scoop about two tablespoons of the dough at a time, and place on top of the strawberries.
  • Repeat until all of the dough is gone.
  • Bake for 40-45 minutes. 
  • At the 25 minute mark, place foil on top to prevent too much browning!
  • Enjoy!
