ALMOND BUTTER PROTEIN BARS

Ingredients

THE BASE:

  • 1 cup almond butter (peanut butter is yum too!)
  • ¼ cup maple syrup 
  • 1 tsp vanilla extract
  • cup protein powder of choice 
  • ½ cup hemp seeds
  • ½ cup ground flax seeds
  • 3 tbsp melted coconut oil

THE TOPPING:

  • 1 chocolate bar (I used a Hu kitchen almond butter and puffed quinoa bar)
  • 1 tsp coconut oil
  • sea salt

Instructions

  • In a medium bowl, whisk together the almond butter, maple syrup, coconut oil, and vanilla, until smooth. 
  • Next add the protein powder, hemp and flax, and stir together well. Dough should be thickkkk; If it’s not add a little more protein powder. 
  • Line a 9x5 or 8x4 pan with parchment paper (coat inside of pan with oil first so paper sticks). Press dough evenly in the pan and set aside. 
  • Melt chocolate bar and coconut oil. I do this in 30 second intervals in the microwave. pour chocolate evenly on top. 
  • Refrigerate for 30 to 45 min before slicing. 
  • Sprinkle sea salt on top.
