Start by preparing the eggs. Crack the eggs into a large bowl or measuring glass, followed by the half & half, sea salt, and black pepper. Whisk them well, until they're fully combined.
Next, heat a non-stick skillet, on the stove, over medium heat, and add in the olive oil.
Once the pan is hot, pour in the egg mixture.
Use a rubber spatula to gently push the eggs from the sides of the skillet into the center, repeating this process over the course of two minutes or so, until the eggs are mostly set, but still a little undercooked. The eggs will continue to cook in the pan, as they cool! Once the eggs are done, set them aside.
Next, preheat your oven to 375 F.
Line a baking sheet with parchment paper.
Cut open each croissant halfway, and line them up on the baking sheet.
Next, add a 1/2 slice of cheese to one half of the croissant, followed by the ham, turkey, and bacon.
Add a scoop of the soft scrambled eggs to the croissant, alongside a sprinkle of chopped chives.
Use a toothpick to hold the sandwiches closed.
Then, grate parmesan cheese on top of the croissants and transfer them to the oven.
Allow them to bake for 7-8 minutes, or until they're warm and the cheese has melted on top.
Once they're done, remove them from the oven. Serve them immediately, and enjoy!
