Best Ever Croissant Breakfast Sandwiches

When I say that these are truly the Best Ever Croissant Breakfast Sandwiches, I mean it. These sandwiches are filled with with soft scrambled eggs, melted cheddar cheese, and a medley of turkey, ham, and bacon, for a delicious and hearty breakfast on-the-go. Plus, these sandwiches can easily be prepared ahead of time, making them the perfect meal-prep recipe.

Friends, if there is one breakfast that I daydream about on the daily, it is a delicious Croissant Breakfast Sandwich. I fell in-love with classic bodega breakfast sandwiches back when I lived in New York City. But in New York, they’re usually served on a roll or bagel. So, when I moved back to California and found the breakfast sandwiches here are often served on a buttery croissant… I knew that coming back home was the right decision. Because if there’s one thing that can make a breakfast sandwich better, it’s a croissant!

And, these breakfast sandwiches are truly loaded with everything that you need. The croissants are loaded with soft scrambled eggs topped with fresh chives, turkey, ham, a slice of bacon, and, of course, a slice of cheddar cheese. What more could you ask for? Pair this sandwich with your favorite latte, and you’ve got the perfect breakfast ready-to-go!

One of the best parts about these sandwiches, too, is that they can easily be meal-prepped ahead of time, so that you can unwrap a delicious breakfast sandwich every morning and take it on-the-go! See below for the easiest way to prepare these sandwiches ahead of time.

What You Need to Make These Perfect Breakfast Sandwiches

  • Croissants: Arguably the best part about these breakfast sandwiches is that the traditional bread is swapped out for a delicious, buttery croissant. I use mini croissants in order to make these sandwiches perfectly-sized and delicious.
  • Eggs: Of course, you’ll need eggs in order to make this recipe! You’ll need 6 eggs in order to fill all of the sandwiches.
  • Half & Half: The key to achieving the perfect soft scrambled eggs is to mix the eggs with half & half. It makes the eggs so light and fluffy, and absolutely delicious! You can also opt to use dairy-free half & half, if you prefer.
  • Kosher Salt & Ground Black Pepper: A pinch of salt and pepper add the perfect flavor to these scrambled eggs!
  • Olive Oil: A little olive oil will allow the eggs to scramble perfectly. If you don’t want to use olive oil, you can use any oil of your choosing.
  • Cheddar Cheese: When it comes to making the perfect breakfast sandwich, no cheese reigns supreme quite like cheddar cheese.
  • Meat: These sandwiches are loaded with a combination of turkey, ham, and bacon, for a deliciously hearty sandwich.
  • Chives: Chives add a delicious, herby flavor to the soft scrambled eggs! Yum!
  • Parmesan Cheese: I love finishing off these Croissant Breakfast Sandwiches with a sprinkle of grated parmesan cheese, for that perfect crispy, cheesy touch!

Line a baking sheet with parchment paper. Cut open each croissant halfway, and line them up on the baking sheet. Next, add a 1/2 slice of cheese to one half of the croissant, followed by the ham, turkey, and bacon.

Two Ways to Make These Breakfast Sandwiches

While these sandwiches are delicious when served immediately, they can also be prepared ahead of time! These sandwiches are one of my favorite meal-prep breakfast recipes, and taste just as good the next day.

Add a scoop of the soft scrambled eggs to the croissant, alongside a sprinkle of chopped chives. Use a toothpick to hold the sandwiches closed. Then, grate parmesan cheese on top of the croissants and transfer them to the oven.

How to Make These Breakfast Sandwiches

Start by preparing the eggs. Crack the eggs into a large bowl or measuring glass, followed by the half & half, sea salt, and black pepper. Whisk them well, until they’re fully combined. Next, heat a non-stick skillet, on the stove, over medium heat, and add in the olive oil. Once the pan is hot, pour in the egg mixture.

Use a rubber spatula to gently push the eggs from the sides of the skillet into the center, repeating this process over the course of two minutes or so, until the eggs are mostly set, but still a little undercooked. The eggs will continue to cook in the pan, as they cool! Once the eggs are done, set them aside. Next, preheat your oven to 375 F.

Line a baking sheet with parchment paper. Cut open each croissant halfway, and line them up on the baking sheet. Next, add a 1/2 slice of cheese to one half of the croissant, followed by the ham, turkey, and bacon. Add a scoop of the soft scrambled eggs to the croissant, alongside a sprinkle of chopped chives. Use a toothpick to hold the sandwiches closed.

Then, grate parmesan cheese on top of the croissants and transfer them to the oven. Allow them to bake for 7-8 minutes, or until they’re warm and the cheese has melted on top. Once they’re done, remove them from the oven. Serve them immediately, and enjoy!

How to Meal-Prep These Breakfast Sandwiches

To prepare these sandwiches in advance, follow steps 1-11 above. Once the sandwiches are assembled, wrap each one tightly in plastic wrap. Then, transfer the sandwiches to the freezer.

To reheat the sandwiches, remove the plastic wrap and place the sandwich in a paper towel. Then, place the sandwich into the microwave for 1-2 minutes, until it’s heated through completely. Finally, serve and enjoy!

Ingredients

  • 8 Mini Croissants
  • 6 Eggs
  • ¼ Cup Half & Half you can also use a non-dairy half & half, here!
  • ½ Teaspoon Kosher Salt
  • ½ Teaspoon Ground Black Pepper
  • 2 Teaspoons Olive Oil
  • 4 Slices Sharp Cheddar Cheese cut in half
  • 8 Slices Turkey
  • 8 Slices Ham
  • 8 Slices Bacon cooked
  • 1 Bunch Chives finely chopped
  • Parmesan Cheese grated – for garnishing (optional)

Instructions

To Make the Sandwiches:
