Soft scrambled eggs are a true delicacy, and in my opinion, they are the KING of the egg world. They are the perfect comfort food, and are perfect for a lazy Sunday morning breakfast or brunch. If you’ve ever seen the most perfect, light, and fluffy scrambled eggs appear on your T.V. screen and wondered how you could make your eggs like that, then friends, let me teach you exactly how.

The key to making perfect soft scrambled eggs is to cook them low and slow. You want to heat a non-stick skillet over low heat and add a small amount of butter. Once the butter is melted, crack in the eggs and start stirring immediately. The eggs should be cooked slowly, over low heat, and stirred constantly.

As the eggs cook, they will begin to thicken and curdle. This is the key to achieving that delicate, custard-like texture that is the hallmark of soft scrambled eggs. As you continue to stir, the eggs will start to form soft curds, and the final product should be creamy and tender.

I remember the first time I made soft scrambled eggs, I was a bit nervous. I had always been used to cooking my eggs over high heat and scrambling them until they were dry and fluffy. There are only three simple ingredients that you need in order to make the perfect soft scrambled eggs. It truly doesn’t get any simpler and easier than that!

  • Eggs: Of course, you’ll need eggs to make these soft scrambled eggs!
  • Butter: The key to making these eggs perfect is to use butter. You can use dairy butter or dairy-free butter, but I highly recommend using butter over oil here.
  • Sea Salt: Flaky sea salt and eggs are a match made in heaven. Just a sprinkle of salt helps the flavor of these delicious eggs to truly take center stage and shine!

Five Steps to Making the Perfect Soft Scrambled Eggs

To make these soft scrambled eggs, crack your eggs into a bowl and whisk them well, making sure to get a good amount of air into the mixture. The air will make the eggs light and fluffy, and achieve their ideal texture. And, of course, make sure to whisk them until there are no clumps.

Next, add your eggs to a nonstick pan (this is SUPER important, to ensure that the eggs don’t stick) and heat them over medium-low heat. The key to achieving that perfect soft scramble is to go low and slow, so that the eggs retain their moisture. Higher heat temperatures can make the egg proteins bind together, causing them to yield a tougher result.

Then, using a rubber spatula, gently push the eggs from the sides of the skillet into the center, repeating this process over the course of two minutes or so, until the eggs are mostly set, but still a little undercooked. The eggs will continue to cook on the plate, as they cool, so there will be no raw bits!

Finally, once done, serve your perfectly soft scrambled eggs while they’re still warm, and enjoy!
