My viral cucumber salad recently took TikTok by storm, and now, I've created a twist on that viral recipe, but with a special, new ingredient: radish. That's right, my Cucumber Radish Salad is a bright, vibrant. refreshing salad that is sure to satisfy both your taste buds and your tummy. This salad is naturally gluten-free, vegetarian-friendly, and can easily be made dairy-free with a simple substitution. Say goodbye to overly-complicated salad recipes, because this recipe proves that sometimes, simple really is better!

Ingredients

  • 1 English Cucumber sliced thin
  • 6 Radishes sliced thin
  • 3 Tablespoons Fresh Dill
  • 1 Bunch Green Onions chopped
  • 1 Clove Garlic mashed
  • Cup Greek Yogurt or substitute a plant-based yogurt
  • 2 Tablespoons Red Wine Vinegar
  • Sea Salt to taste
  • Black Pepper to taste

Instructions

  • Start by washing and chopping your vegetable; slice your cucumber and radish thin using a sharp knife or a mandolin, and place them into a large bowl.
  • Next, chop your dill, green onions, and garlic thin, and add them to the bowl with the cucumber and radish.
  • Finally, add in the remaining ingredients – the greek yogurt, red wine vinegar, sea salt, and black pepper.
  • Toss until all of the ingredients are fully combined, then serve and enjoy!
  • Store any leftovers in an airtight container in the fridge for up to three days.
