This Creamy Shallot Vinaigrette comes together with just a handful of healthy ingredients and in less than five minutes! It's perfect for tossing over your favorite pastas, salads, pasta salads, or enjoying as a delicious dip with your favorite veggies! This is one dressing recipe that I always keep prepared in my fridge, because it's the perfect way to elevate your favorite recipes!

Equipment

  • 1 Blender You already know that my Vitamix is my ride-or-die blender. It is my favorite kitchen gadget, and I use it every single day!
  • 1 Large Mason Jar A large mason jar is perfect for storing your dressings!

Ingredients

For the Creamy Shallot Vinaigrette:

  • ½ Cup Extra Virgin Olive Oil
  • 3 Tablespoons Red Wine Vinegar
  • 2 Tablespoons Lemon Juice
  • 1 Tablespoon Dijon Mustard
  • 1 Large Shallot chopped
  • 3 Cloves Garlic mashed
  • 1 Teaspoon Italian Seasoning
  • ½ Teaspoon Kosher Salt
  • ½ Teaspoon Ground Black Pepper

Instructions

  • Prepare the dressing by adding all of the vinaigrette ingredients (the olive oil, red wine vinegar, lemon juice, dijon mustard, shallot, garlic, Italian seasoning, kosher salt, and ground black pepper) to a blender.
  • Blend the ingredients until they're creamy and smooth.
  • Taste and adjust the seasonings as needed.
  • Add the dressing to your favorite salad recipes and enjoy! Store any leftovers in an airtight container, in the fridge, for up to one week.
