Crispy Parmesan Chicken Strips
These Crispy Parmesan Chicken Strips are guaranteed to be a crowd pleaser. This meal comes together in under 30 minutes, and the serving possibilities are endless! Dip them in ketchup, warm marinara sauce, or serve over some garlic-olive oil pasta or a big, green salad. The kids will love these too!

1 ½ pounds boneless skinless chicken breasts 3 large eggs 2 cloves garlic mashed 1 tablespoon Italian seasoning 1 teaspoon sea salt 1 ¼ cups finely grated parmesan cheese ¼ cup gluten-free bread crumbs ¼ cup gluten-free flour ¼ cup avocado oil or coconut oil 2 tablespoons butter or ghee Garnish: chopped parsley flaky salt, black pepper, and lemon wedges!
Slice each chicken breast in half, lengthwise, then cut them into strips.
In a small bowl, whisk together the eggs, mashed garlic, italian seasoning, and salt.
In a second small bowl, whisk together the parmesan cheese, bread crumbs, and flour.
Drip each piece of chicken first into the egg mixture, then transfer to the parmesan mixture, making sure that each piece is coated very well.
Heat a large skillet over medium heat.
Add about 2 tablespoons of the oil and 1 tablespoon of the butter/ghee to the pan.
Add chicken and cook for about 4 minutes on each side.
Remove cooked chicken from the pan, add remaining oil and butter, and finish cooking all of the chicken.
Plate and serve - garnish with chopped parsley and serve with lemon wedges.
