Crispy Parmesan Chicken Strips

These Crispy Parmesan Chicken Strips are guaranteed to be a crowd pleaser. This meal comes together in under 30 minutes, and the serving possibilities are endless! Dip them in ketchup, warm marinara sauce, or serve over some garlic-olive oil pasta or a big, green salad. The kids will love these too!

Ingredients

  • 1 ½ pounds boneless skinless chicken breasts
  • 3 large eggs
  • 2 cloves garlic mashed
  • 1 tablespoon Italian seasoning
  • 1 teaspoon sea salt
  • 1 ¼ cups finely grated parmesan cheese
  • ¼ cup gluten-free bread crumbs
  • ¼ cup gluten-free flour
  • ¼ cup avocado oil or coconut oil
  • 2 tablespoons butter or ghee
  • Garnish: chopped parsley flaky salt, black pepper, and lemon wedges!

Instructions

  • Slice each chicken breast in half, lengthwise, then cut them into strips.
  • In a small bowl, whisk together the eggs, mashed garlic, italian seasoning, and salt.
  • In a second small bowl, whisk together the parmesan cheese, bread crumbs, and flour.
  • Drip each piece of chicken first into the egg mixture, then transfer to the parmesan mixture, making sure that each piece is coated very well.
  • Heat a large skillet over medium heat.
  • Add about 2 tablespoons of the oil and 1 tablespoon of the butter/ghee to the pan.
  • Add chicken and cook for about 4 minutes on each side.
  • Remove cooked chicken from the pan, add remaining oil and butter, and finish cooking all of the chicken.
  • Plate and serve - garnish with chopped parsley and serve with lemon wedges.
