Pre-oven to 350 F.
Grease a 9-inch pie dish or baking dish well.
Set aside.
Peel apples and slice into pieces about 1/2 inch thick - chunky apples are fine!
Place the apples in the dish.
Sprinkle 1 tablespoon coconut sugar and 1 teaspoon of the cinnamon over the apples.
Next, in a medium bowl, add the flour, coconut sugar, melted butter, vanilla extract, and sea salt.
Stir well, then add in the egg and pecans.
Once everything is incorporated, scoop the batter on top of the apples, using your hands to make even.
Bake 45-50 minutes, until the crust is nice and golden.
