Deconstructed Healthy Apple Pie

Ingredients

  • 4 large apples peeled and sliced
  • 1 cup gluten free baking flour or regular, all purpose flour
  • ¾ cup plus 1 tablespoon coconut sugar
  • 5 tablespoons vegan butter or regular butter, melted
  • 1 egg
  • 1 teaspoon vanilla
  • 2 teaspoons cinnamon
  • ½ teaspoon salt
  • ½ cup chopped pecans

Instructions

  • Pre-oven to 350 F.
  • Grease a 9-inch pie dish or baking dish well.
  • Set aside.
  • Peel apples and slice into pieces about 1/2 inch thick - chunky apples are fine!
  • Place the apples in the dish.
  • Sprinkle 1 tablespoon coconut sugar and 1 teaspoon of the cinnamon over the apples.
  • Next, in a medium bowl, add the flour, coconut sugar, melted butter, vanilla extract, and sea salt.
  • Stir well, then add in the egg and pecans.
  • Once everything is incorporated, scoop the batter on top of the apples, using your hands to make even.
  • Bake 45-50 minutes, until the crust is nice and golden.
