Start by preheating your oven to 350 F.
Next, line a baking sheet with parchment paper and set aside.
In a large mixing bowl, add-in all of your dry ingredients. Mix to fully combine.
Then, add in your wet ingredients and mix until a batter forms.
Gently fold in your blueberries, ensuring that they don't break.
Use a cookie scoop to form 18-20 "bites" on your baking sheet.
Then, grease the back of a spoon or a spatula, and gently flatten out each bite into a round, cookie-like shake. These bites won't flatten or spread while baking, so don't skip this step!
Finally, bake for 10-11 minutes. Then, remove from the oven and let cool completely. The bites will be soft when they leave the oven, but will harden once they cool.
While the bites are cooling, prepare the icing. Mix together the lemon juice and powdered sugar until fully combined. Then, once the bites are fully cooled, drizzle some of the icing over each one.
Once cool, served immediately, and enjoy! Store any leftovers in an airtight container in the fridge for up to one week, or in the freezer for up to two months.
