Locked & Loaded Healthy Chili

This Locked & Loaded Chili Recipe is probably the best chili I've ever had, and that's because it's loaded to the brim with all kinds of vegetables and the combination of flavors is on point! Serve with crusty bread and toppings of choice, and it will soon become your new favorite chili recipe too!

Ingredients

  • 1 pound ground beef (or chicken or turkey)
  • 3 garlic cloves mashed
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 1 small zucchini diced
  • 2 medium carrots diced
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon salt
  • ¼ teaspoon cayenne
  • 1 15 oz can tomato sauce + ½ cup water
  • 1 15oz can corn
  • 1 15oz can black beans, drained and rinsed
  • 1 15oz can crushed tomatoes

Toppings

  • greek yogurt or sour cream, diced avocado, cilantro, shredded cheese, bread

Instructions

  • Place a large pot on the stove and add the oil.
  • Once the oil is hot, add the ground meat, along with the spices (chili powder, cumin, salt, and cayenne).
  • Saute for about one minute, then add the garlic, onions, zucchini, and carrots.
  • Saute for about 7 minutes more, until the the meat is cooked and the vegetables begin to soften.
  • Next, add the tomato sauce, beans, crushed tomatoes, corn, and water, stirring everything together well.
  • Bring everything to a boil.
  • Once everything is boiling, reduce the heat to low and cover.
  • Simmer for 15 minutes.
  • Serve with crusty bread and toppings of choice.
  • Enjoy!
