Meal Prep Mason Jar Omelettes

When it comes to meal prep, my goal is always to make the process of prepping my favorite meals as simple and easy as possible, which is why I'm super excited to share a meal-prep friendly twist on one of my favorite breakfast recipes: omelettes. These Meal Prep Mason Jar Omelettes are a quick and easy way to make a protein-packed and veggie filled omelette in a matter of minutes!

Equipment

Ingredients

  • 4-8 Eggs You can use 1 or 2 eggs for each omelette!
  • ¼ Teaspoon Oil of Choice for lightly greasing the inside of each jar
  • Omelette Fillings of Choice

Instructions

  • Start by preparing your filling ingredients: wash and chop all of your veggies into small pieces. If you’re using meat, pre-cook and chop your meat so that it will easily fit into the jars.
  • Next, divide your fillings equally amongst your four mason jars, making sure to fill the jars approximately halfway each.
  • Then, cover the jars and refrigerate them until you’re ready to eat.
  • When you’re ready to eat your omelettes, simply remove one of the jars from the fridge and lightly grease the inside with a little bit of oil. 
  • Then, crack 1-2 eggs into the jar, place the cover back on, and shake the jar until the eggs are fully mixed with the omelette fillings.
  • Finally, remove the lid and place your jar into the microwave for 1 1/2 minutes, until the egg is fully cooked, light, and fluffy. 
  • Carefully remove the jar from the microwave, serve, and enjoy!
