Mediterranean Ground Beef Bowls with Lemon Tahini Sauce

3 Cloves Garlic mashed 1 Zucchini chopped (~3/4 cup) 1 Orange Bell Pepper chopped ¾ Cup Cherry Tomatoes halved ¼ Cup Kalamata Olives sliced 1 Tablespoon Olive Oil ½ Red Onion diced 1 Pound Ground Beef 2 Teaspoon Dried Oregano 1 Teaspoon Cumin 1 Teaspoon Paprika 1 Teaspoon Kosher Salt ½ Teaspoon Ground Black Pepper ½ Cup Feta Cheese crumbled 2 Tablespoons Parsley chopped For the Lemon Tahini Sauce ¼ Cup Lemon Juice ⅓ Cup Olive Oil 3 Tablespoons Tahini 2 Tablespoons Honey 2 Tablespoons Red Wine Vinegar 1 Clove Garlic mashed 1 Teaspoon Sea Salt 1 Teaspoon Black Pepper Water to thin; as needed
Prepare sauce—add all of the sauce ingredients to a small blender and blend until creamy and smooth.
Taste and add water to thin as needed, then set aside.
Mash your garlic and chop veggies—zucchini, bell pepper, tomatoes, olives, and red onion.
Add olive oil to a large pan over medium heat.
Once the pan is hot, add the red onion and saute for 3 minutes or so, then add the garlic.
Stir for about 15 seconds, then add in the ground beef, breaking it down into tiny pieces and stirring until cooked through.
Next add the bell pepper, zucchini, tomatoes and seasonings (oregano, cumin, paprika, salt and pepper).
Continue to stir for another 5 minutes or so until all of the veggies have softened.
Stir in the olives and feta cheese.
Remove from the heat and divide between bowls and drizzle the lemon tahini sauce on top. ENJOY!
