Ingredients

  • 3 Cloves Garlic mashed
  • 1 Zucchini chopped (~3/4 cup)
  • 1 Orange Bell Pepper chopped
  • ¾ Cup Cherry Tomatoes halved
  • ¼ Cup Kalamata Olives sliced
  • 1 Tablespoon Olive Oil
  • ½ Red Onion diced
  • 1 Pound Ground Beef
  • 2 Teaspoon Dried Oregano
  • 1 Teaspoon Cumin
  • 1 Teaspoon Paprika
  • 1 Teaspoon Kosher Salt
  • ½ Teaspoon Ground Black Pepper
  • ½ Cup Feta Cheese crumbled
  • 2 Tablespoons Parsley chopped

For the Lemon Tahini Sauce

  • ¼ Cup Lemon Juice
  • Cup Olive Oil
  • 3 Tablespoons Tahini
  • 2 Tablespoons Honey
  • 2 Tablespoons Red Wine Vinegar
  • 1 Clove Garlic mashed
  • 1 Teaspoon Sea Salt
  • 1 Teaspoon Black Pepper
  • Water to thin; as needed

Instructions

  • Prepare sauce—add all of the sauce ingredients to a small blender and blend until creamy and smooth.
  • Taste and add water to thin as needed, then set aside.
  • Mash your garlic and chop veggies—zucchini, bell pepper, tomatoes, olives, and red onion.
  • Add olive oil to a large pan over medium heat.
  • Once the pan is hot, add the red onion and saute for 3 minutes or so, then add the garlic.
  • Stir for about 15 seconds, then add in the ground beef, breaking it down into tiny pieces and stirring until cooked through.
  • Next add the bell pepper, zucchini, tomatoes and seasonings (oregano, cumin, paprika, salt and pepper).
  • Continue to stir for another 5 minutes or so until all of the veggies have softened.
  • Stir in the olives and feta cheese.
  • Remove from the heat and divide between bowls and drizzle the lemon tahini sauce on top. ENJOY!
