Monster Cookie Protein Bark

This Monster Cookie Protein Bark is my favorite no-bake treat to keep stocked. It's packed with oats, powdered peanut butter, and collagen, then topped with a chocolate peanut layer for the perfect sweet-and-salty crunch. Break it into pieces and enjoy all week long!

Ingredients

  • 1 Cup Quick Cook Rolled Oats
  • Cup Powdered Peanut Butter like PB2 or Naked PB⁣
  • Cup Collagen Powder or protein powder⁣
  • Cup Maple Syrup
  • ¼ Cup Coconut Oil melted⁣
  • 2 Teaspoons Vanilla Extract
  • ½ Cup Salted Peanuts
  • ¾ Cup Chocolate Gems I use Unreal
  • ¾ Cup Chocolate Chips I use Hu
  • 1 Teaspoon Coconut Oil

Instructions

  • To make this bark, mix together the oats, powdered peanut butter, collagen, maple syrup, melted coconut oil, and vanilla extract until everything is well coated. Add in most of the peanuts, reserving a small handful for topping, along with the chocolate gems. Stir until fully combined.
  • Line a quarter sheet baking pan with parchment paper and press the oat mixture into an even layer. Spraying your hands with a little oil spray makes this step much easier since the mixture can be sticky.
  • Next, make the chocolate topping. In a small microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second increments, stirring between each, until fully melted and smooth.
  • Pour the melted chocolate over the oat layer and spread it into an even layer with a spatula. Chop the remaining peanuts and scatter them over the top, then finish with a sprinkle of flaky salt.
  • Freeze for at least one hour, or until fully hardened. Cut or break into pieces and enjoy!
