This Monster Cookie Protein Bark is my favorite no-bake treat to keep stocked. It's packed with oats, powdered peanut butter, and collagen, then topped with a chocolate peanut layer for the perfect sweet-and-salty crunch. Break it into pieces and enjoy all week long!

    If there’s one no-bake treat you make, let it be this Monster Cookie Protein Bark. This sweet and salty bark comes together with just a few minutes of prep and is made from simple ingredients you probably already have in your pantry. It’s the ultimate prep-ahead snack, and it happens to pack in real protein too. Simply mix, press, top with chocolate, and freeze, and you’ll have a sweet treat ready anytime the craving strikes.

    Friends, if you need a no-bake sweet treat that you can break into pieces and snack on all week, this Monster Cookie Protein Bark is the one. It’s got everything I love in a treat: chocolate, peanut butter, a little salty crunch, and enough protein to make it feel like more than just dessert. Me and my boys go crazy for this one, so it’s an easy win in our house.

    You can store this bark in the fridge, but I actually prefer keeping mine in the freezer. It gets that firm, almost fudgy bite, and it’s incredible broken into small pieces and scattered over a bowl of vanilla ice cream. Just saying, you’re going to want to try that.

    Also, the macros come in at about 7g protein, 20g carbs, and 7g fat per serving, so this is one of those treats that fits right into a balanced day without any fuss.

    To make this monster cookie protein bark, you’ll need quick cook rolled oats, powdered peanut butter, collagen powder, maple syrup, coconut oil, vanilla extract, salted peanuts, chocolate gems, chocolate chips, and flaky salt.

    Mix the oats, powdered peanut butter, collagen, maple syrup, coconut oil, and vanilla extract until everything is well coated. Add in most of the peanuts, reserving a small handful for topping, along with the chocolate gems.

    What You Need to Make This No-Bake Protein Bark

    • Quick Cook Rolled Oats: Quick cook oats hold together well once pressed into the pan, so try to avoid swapping in steel-cut oats here.
    • Powdered Peanut Butter: I like PB2 or Naked PB for this recipe since they add rich peanut butter flavor without a ton of extra fat.
    • Collagen Powder: This is what boosts the protein in every bite. Feel free to swap in your favorite protein powder if that’s what you have on hand, just keep in mind the flavor may shift slightly depending on the brand.
    • Maple Syrup: This is the sweetener that binds everything together and adds a natural, warm sweetness. It also helps the oat mixture stick together so it presses into a solid layer.
    • Coconut Oil: Melted coconut oil helps everything come together and gives the bark a nice firm set once it chills. You’ll use a little extra in the chocolate topping too.
    • Vanilla Extract: A splash of vanilla rounds out the flavor and makes it taste like a treat instead of a protein snack.
    • Salted Peanuts: These add the crunch and salty contrast that makes this bark so addictive. I like to save some to chop and sprinkle on top for extra texture.
    • Chocolate Gems: I use my favorite Unreal chocolate gems mixed right into the oat base for little pockets of chocolate in every bite.
    • Chocolate Chips: These melt down into the glossy chocolate topping that goes over the top of the bark. I love using HU Kitchen chocolate chips here for a cleaner ingredient list.
    • Flaky Salt: A sprinkle on top ties the whole sweet and salty thing together.

    How to Make This Monster Cookie Protein Bark

    In a large bowl, mix together the oats, powdered peanut butter, collagen, maple syrup, melted coconut oil, and vanilla extract until everything is well coated. Add in most of the peanuts, reserving a small handful for topping, along with the chocolate gems. Stir until fully combined.

    Line a quarter sheet baking pan with parchment paper and press the oat mixture into an even layer. Spraying your hands with a little oil spray makes this step much easier since the mixture can be sticky.

    Next, make the chocolate topping. In a small microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second increments, stirring between each, until fully melted and smooth.

    Pour the melted chocolate over the oat layer and spread it into an even layer with a spatula. Chop the remaining peanuts and scatter them over the top, then finish with a sprinkle of flaky salt. Freeze for at least one hour, or until fully hardened. Cut or break into pieces and enjoy!
