Blast this to the group chat

I have to be honest with you, I was scrolling through my friend Melissa’s page one afternoon and when I saw her smashed date s’mores, I stopped dead in my tracks. I immediately ran to my kitchen, gathered all the ingredients, and got to work. And now that I’ve made them, I don’t know how I ever lived without them. These look impressive, taste incredible, and take almost no effort to pull together — which, as you probably know by now, is basically my love language.

The base of these little bites is a smashed medjool date, which acts as the most natural, caramel-like foundation for all of the toppings. Layer on a piece of graham cracker, a dollop of marshmallow fluff, and a drizzle of melted chocolate, then pop them in the freezer for 30 minutes, and that’s it. You’ve got a treat that tastes like a classic campfire s’more, but with a wholesome twist.

These are also ridiculously easy to make for a crowd. Whether you’re hosting a girls’ night, bringing a tray to a party, or just want something fun to make with your kids on the weekend, these deliver every single time. And because they store so well in the fridge or freezer, you can make them well in advance.

A top-down view of chocolate chips in a bowl, a bowl of whole dates, a plate of square graham crackers, a glass of milk, and two spoons on a light marble surface.
To make these, you’ll need Medjool dates, graham crackers, marshmallow fluff, chocolate chips, and coconut oil.
A red baking sheet lined with parchment displays dates stuffed with nut butter and topped with square graham cracker pieces. Bowls of dates, graham crackers, and a jar of white spread are nearby on a marble surface.
Place one piece of graham cracker on top of each smashed date, pressing it down gently so it sticks.

What You Need to Make These Smashed Date S’mores

    • Medjool Dates: When smashed, they become perfectly soft, sticky, and caramel-like in flavor. Make sure you’re using medjool dates specifically — they’re much softer and more pliable than other varieties, which makes them ideal for smashing.
    • Graham Crackers: I love using Simple Mills Honey Grahams, which are made with simple, wholesome ingredients and happen to be gluten-free. Feel free to use any graham cracker you love, though.
    • Marshmallow Fluff: A generous dollop of marshmallow fluff is what really gives these bites that classic s’mores moment. I’ve been using Toonie Moonie Organics marshmallow fluff, which is made with organic ingredients and is absolutely delicious.
    • Chocolate Chips: I recommend using Hu Kitchen chocolate chips, which are made without refined sugar and taste absolutely incredible.
    • Coconut Oil: Just 1 teaspoon of coconut oil mixed into the melted chocolate helps it melt smoothly and gives it a beautiful, glossy finish.
A tray lined with parchment paper holds snacks topped with melted chocolate and marshmallow. A hand uses a spoon to add marshmallow to a snack. Surrounding the tray are graham crackers, chocolate chips, and a bowl of melted chocolate.
Finally, melt the chocolate. Add the chocolate chips and coconut oil to a microwave-safe bowl and microwave in 30-second intervals, stirring between each interval, until the chocolate is fully melted and smooth. Use a spoon to drizzle (or pour!) the melted chocolate over the top of each bite.

How to Make These Easy Smashed Date S’mores

To make these smashed date s’mores, start by prepping your dates. Line a baking sheet or large plate with parchment paper and set it aside. Remove the pits from all 15 medjool dates, then place each date on the parchment paper and use the palm of your hand (or the bottom of a glass) to press them down into a flat, round disc shape.

Next, break the graham crackers into small pieces that are roughly the same size as each smashed date. Place one piece of graham cracker on top of each smashed date, pressing it down gently so it sticks. Then, add a small dollop of marshmallow fluff on top of each graham cracker piece. You can use a spoon or a small offset spatula to spread it out a little — whatever works best for you!

A person pulls apart a chocolate-covered treat revealing gooey marshmallow inside. The treat is topped with crumbled cookies and rests on a brown surface with more similar treats nearby.
Once done, they’re ready to enjoy! Store any leftovers in an airtight container in the refrigerator for up to one week, or in the freezer for up to one month.

Once all of the bites are assembled, transfer the tray to the freezer for 30 minutes, or until the chocolate has fully set. Once done, they’re ready to enjoy! Store any leftovers in an airtight container in the refrigerator for up to one week, or in the freezer for up to one month.

    Frequently Asked Questions

Can I make these ahead of time?

These bites are the perfect make-ahead treat. You can assemble them up to a week in advance and store them in an airtight container in the fridge, or freeze them for up to a month. They’re ideal for parties and entertaining because all the work is done before your guests arrive. Just pull them out of the fridge or freezer a few minutes before serving!

Do the dates need to be at room temperature?

Yes! If your dates are cold or firm, they’ll be harder to smash. Let them sit at room temperature for about 10–15 minutes before making this recipe so they’re soft and easy to work with.

Can I use a different chocolate?

Absolutely. Any chocolate chip or chocolate bar that you love will work here. Dark chocolate, milk chocolate, white chocolate — use whatever makes you happiest! If you want to keep this recipe refined sugar-free, just make sure to choose a chocolate that fits that criteria.

    Are these gluten-free?

They can be! Simply use a certified gluten-free graham cracker (like Simple Mills) and a gluten-free marshmallow fluff, and this recipe is entirely gluten-free.
