Smashed Date S'mores

These Smashed Date S'mores are the ultimate no-bake treat that you'll want to keep stashed in your freezer at all times. Made with just four simple ingredients, they come together in minutes and taste like a classic s'more — with a wholesome, date-sweetened twist!

Ingredients

  • 15 Medjool Dates
  • 1-2 Jars Marshmallow Fluff
  • 1 Box Simple Mills Honey Cinnamon Sweet Thins
  • 1 ½ Cups Chocolate Chips
  • 1 Teaspoon Coconut Oil

Instructions

  • To make these smashed date s'mores, start by prepping your dates. Line a baking sheet or large plate with parchment paper and set it aside. Remove the pits from all 15 medjool dates, then place each date on the parchment paper and use the palm of your hand (or the bottom of a glass) to press them down into a flat, round disc shape.
  • Next, break the graham crackers into small pieces that are roughly the same size as each smashed date. Place one piece of graham cracker on top of each smashed date, pressing it down gently so it sticks.
  • Then, add a small dollop of marshmallow fluff on top of each graham cracker piece. You can use a spoon or a small offset spatula to spread it out a little — whatever works best for you!
  • Finally, melt the chocolate. Add the chocolate chips and coconut oil to a microwave-safe bowl and microwave in 30-second intervals, stirring between each interval, until the chocolate is fully melted and smooth. Use a spoon to drizzle (or pour!) the melted chocolate over the top of each bite.
  • Once all of the bites are assembled, transfer the tray to the freezer for 30 minutes, or until the chocolate has fully set. Once done, they're ready to enjoy! Store any leftovers in an airtight container in the refrigerator for up to one week, or in the freezer for up to one month.
