Classic celebration cake with a side of protein?! Say no more. These No-Bake Celebration Bites taste JUST like a classic vanilla birthday cake that you know and love, but have an ample amount of protein to keep you full and satisfied. Plus, they are also gluten-free, grain-free, and raw, and vegan-optional, so they are truly the perfect treat for anyone!
- 1 ½ Cups Raw Cashews
- 3 Tablespoons Coconut Flour
- ¼ Cup Coconut Sugar
- ¼ Cup Collagen Peptides
- 2 Tablespoons Almond Milk
- 2 Teaspoons Vanilla Extract
- 1 Teaspoon Almond Extract
- 1 Pinch Sea Salt
- ½ Cup Rainbow Sprinkles
Start by lining a baking sheet with parchment paper. Set aside.
Add all of your ingredients (minus the sprinkles) to a food processor and pulse until smooth. You can use a rubber spatula to scrape down the sides of the food processor, as needed.
Once you achieve a dough-like consistency, add in 1/4 cup of the rainbow sprinkles and pulse a couple of times.
Using a cookie scoop, scoop some of the dough into your hands and roll it into a ball. Repeat until all of the dough is gone - this should make about 12 to 15 balls.
Then, roll each ball in the remaining sprinkles.
Freeze the balls for 30 minutes so that they harden.
Then, plate and enjoy!
